Cut into cubes: carrots, peppers, parsnips, celery, parsley, gulia and an onion.
Put the vegetables in a pot, pour 4 liters of cold water and bring to a boil. Separately, boil 500 ml. of water in a saucepan. When the water boils, add 3 tablespoons of rice and cook for 2 minutes. Drain the rice and rinse under running cold water. Ground meat, pre-cooked rice, the two egg whites (the yolks are kept separately), the second finely chopped onion, finely chopped green parsley, a teaspoon of sweet paprika, salt and pepper knead well. From this composition the meatballs are formed. When the water and vegetables start to boil, add the remaining three tablespoons of rice, well washed, then the meatballs and match the taste of the juice with salt. Let it boil for about 20 minutes, then put in the soup and peeled and cut into small cubes.
Bring to the boil for another 2-3 minutes, then turn off the heat and add the chopped greens (dill, green parsley, larch). Cover with a lid. Until the soup cools down a bit, beat the sour cream with the yolks and 2 tablespoons of cold water, then dilute with a pinch of hot soup and only then pour into the pot. It suits the taste of salt, pepper and sour (vinegar, lemon juice or borscht).


Preparation:

I hardened the onion for a few minutes until it was lightly browned, I put a paprika powder and then all the other grated vegetables on the grater with small holes, a little water and I let them boil 2-3 times, to get a nice color, then I filled the bowl with water, leaving it on medium heat until I prepared the meatballs. For the meatballs, I cut the chicken breast into thin slices, like for a barbecue, and then I beat them with a hammer until they were crushed very well (for those who don't want to use a meat grinder).

I added the egg white, rice, water, pepper, salt, flour and dill and mixed them until all the ingredients were well blended. When the soup boiled a few times, I added from the composition of meatballs balls as big as an olive and let everything boil for 20 minutes with a lid. When all was cooked, I added the remaining yolk from the meatballs beaten with a little cold water, salt and dill. Sometimes I add sour cream after the soup is not so hot.

How to prepare meatball soup:

Step 4: Mix the minced meat, pre-cooked rice, the egg whites of the two eggs, a chopped onion, parsley, paprika, salt and pepper to prepare the meatballs. The hair dryers should be as small as possible.

Step 5: When the vegetables in the large pot have boiled, add the remaining 3 tablespoons of rice and then the meatballs.

Step 6. Leave the soup on the fire for about 20 minutes, then add the diced tomatoes.

Step 7: Let it boil for a maximum of 10 minutes, then turn off the heat and add the parsley.

Step 8: When the soup cools, add the cream mixed with the remaining two yolks. Cream is not mandatory! You can consume it without!

Step 9: Add to taste with vinegar or lemon juice and add salt and pepper to taste.
